![]() Today Brian put the taps in the maple tree. It's hard to believe that we have tapped this maple every year for the last 10 years. We also have two smaller maples that don't yield as much sap, but together give us a nice supply of syrup right from our yard. Even a small maple will offer up its delicious sap, nectar from the trees. I cannot recall when Brian first started tapping trees. When we worked at the Glen, all the maples on the lane to the farmhouse had buckets attached in the spring.
The red wood stove at 801 always had a stockpot of sap boiling away. Countless pots have been warped and burned when, after being watched for hours, the last of the sap boiling at the bottom of the pan would burn in just a few minutes of forgetfulness. Then all the doors and windows had to be opened to let out the burned sugar smell. One of the greatest parts of our kid's education at the Antioch School was tapping the trees, collecting the sap, boiling it down to syrup, then hosting a pancake breakfast for their families with the syrup. Last night we finished boiling down the first batch and this morning I had fresh maple syrup on my waffle. Thank You Trees!
